This Tomato and Bean Soup Recipe was inspired when I flicked through March’s addition of Psychologies Magazine. The first thing that jumped out at me was an article called ‘Perfect Harmony’, featuring recipes from Dale Pinnock’s book ‘The Medicinal Chef: Healthy Every Day’.
I love anything that helps me think about the food I am eating. I’ve had a love hate relationship with food pretty much all my life. I use food to satisfy my boredom, comfort my woes and give myself a huge pat on the back.
I absolutely believe that what goes into our body makes a huge difference to our health and well being, and that we battle constantly with the food industry who are out to seduce us with inappropriate messages about food to make a huge profit. When have you ever seen a healthy red pepper advertised on TV?
The article suggests that this great little bowl of soup is brimming with health benefits. I’m definitely inclined to agree! What struck me about it though was how quick, cheap and easy this was to make. It also makes a great ‘starting point’ recipe.
I’ve adapted it as I’m trying to remove fat from my diet as much as possible. To compensate I’ve added a few extra flavours which I enjoy, chilli of course being one of them!
I’ve just worked with what I had in the kitchen.
Tomato and Bean Soup:
2 tins of chopped tomatoes
2 tablespoons of tomato puree
200ml of reduced salt vegetable stock
1 tin of Butter Beans (but what ever you have will be fine)
Seasoning, chilli, basil and oregano
Simply chop the onions and garlic and add them to a pan with some cooking spray. Cook until soft.
Add the chopped tomatoes, tomato puree and stock, bring to the boil and simmer for a few minutes then blitz with your hand blender until smooth.
Drain your beans, and add them to the soup and simmer for a few more minutes. Add some flavours, tasting as you go. I’ve used chilli, basil and oregano, but whatever works for you really. Taste as you go so you get those flavours just right!
Voila! Soup for lunch, and a replacement for the tinned cream of tomato soup my teenager so loves tomorrow!
